Chef's Restaurant Once through the doors of this former convent converted into a hotel, you enter a large dining room with an immense glass roof offering a magnificent view of Vieux Lyon and its Renaissance rooftops. John Léon and his executive chef David Delsart offer a racy cuisine that suits the place well: the artichoke emulsion crustacean perfect egg appears as a signature, before the gourmet Dombes duckling that deserves a vegetable accompaniment. Isis Barbier, the head pastry chef, concludes this well-executed affair with a remarkable dessert à partager mirabelle tonka. An excellent wine cellar with useful references in Burgundy and the Rhône.
