Chef's Restaurant
The exceptional setting of the Ferme Saint Siméon, overlooking the majestic estuary, should not overshadow the fact that it is now home to a restaurant of distinction, where Matthieu Pouleur—already named a regional “Grand de Demain” by Gault&Millau—has been working over time to restore it to its former glory. All the while asserting a distinctive style—built on fine ingredients, whether freshly caught or raised on the farm—and on well-executed, universally appealing ideas: by reviving the carrelet, he elevates it with tomato, agastache, and basil. He treats sole, zucchini, and shrimp with care, as he does duck, green beans, cherries, and hibiscus, in a lovely blend of reason and seasonality. The “Esquisse” menu at €145 is particularly interesting and offers a good overview of the restaurant’s offerings, concluding with elegant desserts such as chocolate and pistachio with mandarin sauce. The wine cellar features fine vintages, and the service is attentive and enthusiastic.
