This is one of Europe's most legendary hotels, a mountain palace where luxury and scenery, architecture, history and clientele all justify the reputation of the place. The 5* lakeside hotel can be discovered via the table, with its large kitchen and ceilings painted by Gustave Jaulmes. Start with crayfish and foie gras royale with verbena foam from the kitchen garden, followed by blue lobster with beet, citron and vegetable sabayon, spiced up with thorn vinette, hay-smoked pigeon from Bresse farms, butternut, crosnes and génépi-scented jus, organic andoa chocolate and black truffle.
