Remarkable Restaurant Alain Pégouret, known only in the world's top establishments, is an adorable chef. Here, in this lovely house on the Ile Saint-Louis, he puts all his heart and passion into his work. And if here and there he lacks the extra zest of personality we know he's capable of, we're in for a treat every time we visit, complimenting him as much on the technical note (very nicely cooked sweetbreads) as on the artistic note: for example, this new "Olympic sea bass" is a lovely find, marinated in citrus fruits with Kristal caviar, granny-smith pannacotta and a few crunchy vegetables... Good chocolate sudachi cream dessert, fairly classic cellar, very professional service.
