William Elliott is celebrating his 35th anniversary at Westminster this year, and everything is going well because change doesn’t mean giving up tradition. The chef’s cuisine remains precise and refined, the seafood from the Boulogne fisheries is exceptionally fresh, and the menus are rich and well-structured. This is more than enough to justify the three toques, with beautiful seasonal dishes: squid with cherries, almonds, and glasswort; blue lobster with zucchini and saffron; veal sweetbreads with peas, chanterelles, and black figs. These delights come together in a complete five-course menu for 120 €, served in an elegant and cozy setting. A good dessert of the day (cherries, fennel cream, and tagetes sorbet), and a well-stocked wine cellar featuring classic vintages.
