Prestige Restaurant With Philippe Mille's retirement behind them, the Gardinier family has turned to a sure bet to take over the kitchens of this legendary address. Educated at the Ducasse school, of which he has become one of the most loyal lieutenants (Louis XV, Plaza Athénée, Spoon...), Bruno Cirino's former pupil (when the latter was working in the Basque country) undoubtedly has the ideal profile to satisfy a clientele seeking both excellence and assurance. In these aristocratic-looking lounges, where you take your seat after leaving your carriage with the valet, Christophe Moret does what you've come for: luxurious cuisine, based on high-caste products such as foie gras terrine just lacquered, fresh pink Ecly mushrooms and matcha tea powder, goujonnette de saint-pierre, citron confit, leek and potato tagliatelle and marinière sauce, before a very fine two-course Racan pigeon, first à la Montmorency (cherries, cherry almonds and pigeon sauce with cherry pulp) then royale and foie gras consommé. Lovely desserts, including a remarkable work with strawberries, crème fraîche and a strawberry and red wine sorbet. Perfectly oiled service, both precise and always at the right distance, huge cellar.
