Prestige Restaurant It's a palace in the city, a seigneurial estate where we guess the deer must have frolicked in the park. For epicureans and princes alike, Les Crayères is a timeless myth that provides an aristocratic experience. Interior designer Pierre-Yves Rochon has brought together the talents of craftsmen in marble and cabinetry, combining them with Aubusson tapestries and period chandeliers to recreate the French style of refinement and elegance. And chef Philippe Mille has become its distinguished amphitryon, the long-distance captain who, for nearly fifteen years now, has restored all its nobility in a cuisine that is constantly brilliant, consistent and worthy of the place, his "Vitrail de langoustines marinées au verjus", gaufrette coralline and caviar, or his "barbue de ligne meunière céleri confit au beurre d'algues, extraction de céleri, bulles de chardonnay". From foie gras and roast pigeon leg with tagetes oil and sweet and sour artichoke, to the excellent chocolate ruby and rhubarb tart with strawberry water veil and elderflower parfait glacé. In the cellar, the entire team around head sommelier Martin Jean is on hand to enhance the 1000 or so references, including an outstanding selection of champagne bottles. In March 2024, Philippe Mille announced his departure. He will be replaced by Christophe Moret, a loyal member of the Alain Ducasse Group.
