Overlooking Carcassonne, in the heart of a Relais & Châteaux estate between golf course and swimming pool, the Bernard Rigaudis restaurant embodies a certain idea of French tradition. The dining room immediately sets the tone, with its tapestries, red carpet and chandeliers. The cuisine follows suit, classic and timeless. In the three-course formula at €80, frogs' legs, boned and cooked meunière in parsley, are accompanied by a spinach risotto verde that adds a fresh touch to this great classic. The skrei cod, served pearly, confirms our mastery of cooking techniques. For dessert, the Grand Marnier soufflé is an obvious choice. The team in the dining room is warm and professional, supported by a recently arrived sommelier who is already passionate about his work.
