Remarkable Restaurant The estate created by Bernard Rigaudis, with its 5* Relais & Châteaux hotel, gourmet restaurant and golf course, is a rare seigneurial experience just a stone's throw from the citadel of Carcassonne. It's a chartreuse of classical stone architecture, with its majestic sculpted pediments, symmetries and remarkably coherent châtelaine decoration. To orchestrate the pleasures of the table, chef Philippe Deschamps has been chosen, dedicated to creating fine French gastronomy, with occasional nods to the region, with attention to presentation and detail. The €75 menu includes a tour of the estate and local customs, a starter of anchovies from Roque in Collioure, fillets of red mullet cooked one-sided, fennel confit and rock fish jus, rouille with Corbières saffron, a maigre with shellfish bound in black garlic pulp, samphire and artichokes, a "Dieu le fils" cassoulet, a Grand Marnier soufflé, iced Auriac cocktail. Very fine cellar.
