Prestige Restaurant A house, a chef, a team. Haute gastronomy cannot do without one of these three components of success. This Clos des Sens in the hills above Annecy-le-Vieux is now a local institution. Laurent Petit brought it to the top, and Franck Derouet, who worked in his footsteps for many years, is extending its reputation by ploughing his own furrow with Thomas Lorival, his alter ego in the dining room, already awarded the title of Gault&Millau Director of the Year. As for the atmosphere and service, they are those of a grand house. The credo of lake and vegetal nature is maintained, with a few concessions gradually made, as shown by this very fine plate of venison and crayfish, a brilliant and expressive starter after symbolic starters (sage, perch, féra, garlic...). Similarly, the pressed cabbage with dill and smoked féra is quite daring in its slightly gruff peasant air, the leaves barely marked by the flame, and leads to the superb trout with féra bottargue, the creamy, gourmet leek that aims for the essential, and finally the pike, caught and treated ikejimé, matured for six days, firm and delicious in its first skin, a powerful juice enhanced by a few spring onions... This succession already reveals a signature and a style, perhaps less demonstrative than in the past, but at least as conscientious, hard-working and respectful of the environment. If the desserts, technically beyond reproach, were less thrilling, this is no doubt a question of seasonality, as winter lends itself less to flights of flavor. Impeccable service under the direction of Thomas Lorival, who is also and above all a remarkable sommelier, mastering the very strong cellar, unbeatable in the region - what discoveries to be made in this fast-growing vineyard! - rich in all regions, and offering very attractive prices on many grands crus.
