The chic, historic setting of this prestigious hotel is ideally suited to a restoration of the same metal. In this intimate dining room, with its period beams, perfectly laid and spaced tables, majestic stone fireplace and, above all, its imposing reproduction of a painting by Caravaggio, diners are in the right mood. The new chef, Maxime Canal, offers à la carte menus that can be mixed and matched. While the signature starter comes close to achieving three toques (red mullet escabeche, risotto tuile), the overall effect is one of wisdom and prudence, without overturning the table, while the service, a little stilted and without much involvement, doesn't offer much added value. An extensive wine list with good depth from the great vineyards, at logically high prices.
