Chef's Restaurant At the back of the dining room, the bay windows look out directly onto the Cuisance, which flows beneath the foliage (if you can, reserve one of the two tables lining the river, in this pretty blond wood room). A cheerful image of the generous Jura region that Lisa and Jérôme have made their playground, without confining their cooking to it. The chef, who trained at Jeunet's, is just as comfortable with local produce as he is with a yellowtail in ikejime, sucrine, capers and salicornia with a zucchini coulis, or hot foie gras and stuffed cabbage. A regional staple, the ballottine of trout from Les Planches stuffed with morels and oyster mushrooms, yellow wine sauce, black rice cromesquis with comté cheese and smoked trout is the house's flagship dish. A special mention goes to the seasonal strawberry and rhubarb dessert, which rounds off a sequence that is above all modern and free of blinkers. A good Jura wine list, with a substantial selection by the glass, to showcase typical grape varieties (savagnin, trousseau...), natural and friendly service, accompanied by Lisa with the same benevolent simplicity.
