Remarkable Restaurant The charm of the Roaring Twenties and Gatsby still infuses this beautiful Art Deco ensemble, with its sublime terrace overlooking the bay, the Fitzgerald bar and this comfortable dining room. Aurélien Véquaud and his pastry chef Steve Moracchini combine technical skill and gourmet pleasure, rigor and poetry to create creative and refined dishes of the highest quality. And while vegetal products are becoming more and more present, the menu also showcases the Mediterranean and local produce, with occasional allusions to the chef's Vendée origins. Excellent Mediterranean tuna, Buddha hand and roasted sesame, surpassed by the excellent langoustine and mushroom praline, calamondin nage. The esquinado signature dish, crab ravioli, raw cream base, caviar, verbena emulsion, precedes the impeccable saddle of lamb cooked in a kombu crust with Cagnes green beans, mussel fumet with plankton (iodine is never far away in this cuisine) and lemon caviar jus. The pastry chef takes over with three remarkable little desserts, including reconstituted fig, Nice County amber beer sorbet, lambrusco rosso gel, juniper berries, puffed quinoa and Moorish... The work in the dining room is remarkable, punctuated by little dressing shows (preparation of condiments, carving...), and sommelier Aymeric Verdi excels in his field, with a solid cellar to match.
