Remarkable Restaurant In this beautiful château, Audrey and Benjamin Patissier have taken up the torch from Thierry Drapeau, infusing it with a healthy dose of modernity, without ever denying the historicity of the premises and the fine heritage of the dwelling. The natural materials in the dining room have retained this country spirit, with the fresco and natural materials, the bare framework and the beautiful stone. The 2015 MOF cooks seasonal dishes with great precision, including flame-burned mackerel from the Sables-d'Olonne fish market, corn, tomato and squid ink in a mosaic, cabbage salad marinated in lemon balm vinegar, slow-cooked pollack, fennel variation and agastache sauce vierge, Vendeen lamb, sautéed golden rib and thyme-candied grilled potatoes, fig and garrigue gel condiment, black garlic jus, honey-compote pears, crispy shell and laurel cream, chocolate sauce with Jamaican pepper.
