The Relais & Châteaux retains the princely, solemn spirit that made its reputation, continuing to serve these great regional recipes in a historic setting, with large ceiling beams and François Iᵉʳ chairs. On the €175 menu, citrus-flavored trout from the Ecrins, truffled scallops with tangy cloud, fire-roasted Sisteron lamb and lavender honey ice cream. Exceptional cellar with some very fine verticals (Jamet, Vernay...).
