Remarkable Restaurant The guarantee of a fine gastronomic moment in this hushed salon, which respects all the customs of the arrondissement, and is more than appropriately dressed for connoisseur customers who legitimately place their trust in the work of Thomas Boullault. Clean-cut formulas that bring together the multiple talents of the chef, a source with the flair of a bloodhound, a skilful saucier and a talented arranger to combine textures, flavours and beautiful products on a very solid traditional background: tourteau et avocat hass riz koshi-hikari eau de tomate au pimenton de la Véra, filet de bar aux parfums de sakura déclinaison sur l'artichaut, quasi de veau aux girolles asperge au pesto d'ail des ours jus marbré au vin d'Arbois, soufflé chaud aux pistaches de Sicile sorbet griotte for a very fine evening sequence at €175. Impeccable service, good lunch menu at €85.
