Remarkable Restaurant How endearing is this well-executed table, where chef Romain Mahi and pastry chef Ayumi Sugiyama come to the dining room to explain each plate! In four, six or seven beats, and with hidden menus imposed, the result is very convincing: a superb risotto of salicornia-tapioca-hazelnuts and its frothy cloud of parsley; hidden under a fine charcoal tuile a mousse of corn, avocado, oyster, fermented milk, not forgetting a foie gras-anchois cracker. Next comes Arctic char spiked with maritime soda, red plum, drizzled with a gourmet beurre blanc with salmon roe and balsamic vinegar, followed by redfish, smoked eel, kiwi and boosted by a bouillabaisse-kosho. The best of the meal with wild mallard, raw cuttlefish, cuttlefish ink sauce accompanied by fig, fennel, lettuce-rhubarb mousse; served alongside a confit leg and fermented mushrooms for a delicious dish. Equally daring desserts: corn ice cream, popcorn, caramel with soy sauce, or sugar bubble, green tomato, cashew-basil, a fine outcome. A complete cellar, well-stocked with biodynamic and natural wines, presented by a talented young sommelier, Léa Salomon.
