Remarkable Restaurant In almost 50 years of practice, Didier Clément has unrolled some gourmet cable, churning out signature dishes featuring asparagus, porcini mushrooms, langoustine, pigeon and hare. Today, in this mythical residence in the capital of Sologne, he and his wife Marie-Christine maintain a pomp and tradition that he rightly reclaims. Today, however, modernity is infiltrating the table, and the chef has no regrets about moving with the times: zucchini flower stuffed with crabmeat, sparkling egg with chanterelle mushrooms, green asparagus and kitchen tobacco, asparagus with tarragon, pigeon stuffed Babylonian-style, contised leg with sweet spices. Beautiful desserts based on seasonal fruits, cherry and green tea, apricot and pistachio... A large cellar in which wine, for the gentleman, and tea, for the lady, play an important role.
