Remarkable Restaurant It's no slight on this immense establishment to recommend a visit to all those who want to know the benchmarks of French gastronomy, with its codes of hospitality, decorum and rigorous execution of cooking and sauces, as Didier Clément has done so well over the past forty-five years at the helm of Le Lion d'Or, which was already one of the French models of haute cuisine before him. So, yes, no avant-garde, no carabistouilles and no excessive lacto-fermentation, but the simple pleasure of sovereign products in updated preparations, the variation on white asparagus from Sologne, saint-pierre with tarragon and potato milk (quite similar to Robuchon purée), strawberries candied like jam, chiboust cream, iced milk cornet. Impeccable service, from a great house that knows how to maintain its label, enormous cellar, where the sommelier can play his role with passion, capable, for example, of offering a 1989 Bonnezeaux by the glass...
