Chef's Restaurant It's a house that doesn't make a fuss, an innocuous facade opposite the train station in a small border village. Yet the address is a treasure trove, with Marie-Laure's warm welcome and the cuisine of Louis Ciolfi, whose experience with Pierre Gagnaire explains the high standard of his dishes. Beautiful produce and meticulous execution make for a memorable dish: steamed pink Baïgorry trout, bulgur, tomato brunoise and white radish; pan-fried king prawns, potato purée, sun-dried tomatoes and basil pesto; rack of pork cooked at low temperature, pan-fried cauliflower and Alsace plum compote; chocolate coulant and vanilla ice cream.
