Prestige Restaurant Nice in the Tropics? This is the challenge taken up by two brothers, Gaël and Mickaël, who have decided to make the most of their travels and their collection of culinary souvenirs in the pots and pans of Flaveur, their pocket address in the gourmet Gubernatis district, between Hôtel des Postes and Dubouchage. Of course, you don't come here for the decor, but to take a trip! A fabulous roadtrip that sometimes requires a strong heart. The chefs play a lively, dense score, where flavors collide. The palate sometimes loses its compass, intoxicated by so many delicacies. And despite all this profusion, there are also some very interesting reinterpretations of pan bagnat, highlighting the secca d'Entreveaux, before leaving for the Caribbean, with this hollandaise with Curcuma, or this boudin and combawa on a twirling reduction. Back to Piedmont to feast on calamari prepared as tagliatelle, caviar and carnaroli rice. The Menton lemon juice adds a few more tangy notes, and it's magnificent. Then Steve Molinari's catch of the day: bluefin tuna, wild capon and shrimp bonbons swim in this vadouvan broth, all enveloped in a powerful perfume of lovage, a remarkable ^platter on a herbaceous broth with Menton lemon and mussel water, to be sauced copiously (a very good bread is missing). A beautiful, rich dessert, once again exotic Caribbean, passion fruit, pineapple, tapioca, puffed white chocolate, a few granny-smith apple slices, passion sorbet with citrus sauce. A fine connoisseur's cellar, with real nuggets, all the way to the Loire.
