Chef : 1 restaurantA duo of brothers at the helm of a 4-toque restaurant? Look no further, there's only one, and it's in Nice. Gaël, the eldest, and his brother Mickaël have never had any problems of ego or primacy between them. They're both chefs, they complement each other, they share the same vision of the profession, and they have the strength of character and talent that have led them to become one of France's 80 greatest chefs, having been named "Grands de Demain" in our 2010 edition after just a few months in the job.
Their salon on rue Gubernatis may not be a palace, but the elegance, cocoon chic and atmosphere created by theiratmosphere created by their room manager, Mickaël, there's a serenity that could be the envy of some of the Riviera's top names.
And yet, they make no secret of the fact that the two former Michel Del Burgo and Pierre Gagnaire employees sometimes argue for a long time before finding common ground. But it's precisely these (long) discussions that fuel and enrich the two men's thinking, and which have undoubtedly enabled them to achieve, in just ten years, the 4th toque that is the envy of so many chefs.
