There's always a slight thrill in returning to the table of the Laurent brothers, who are known for their inventiveness and taste for the authentic. Jérôme Laurent, who has worked with Yannick Alléno, offers a snapshot of the terroir at a given time and place, where the seasons and localities play an equally important role in the final edifice. Served by Florian Laurent, the menus give free rein to the chef's imagination, as vivid in the recipes as in the dressings, expressed in three to five courses, from €42 to €79. Well thought-out cellar.
