Chef's Restaurant In a sleek, trendy setting, chef Adrien Ferrand takes you on a journey through unusual, gourmet cuisine. After his signature dish, smoked eel (Eels), licorice, apple-hazelnut virgin, roasted butter sauce, we continue with candied carrots evoking the columns of Buren, sorrel cream, sweet onion chutney and turmeric-verbena sauce, before monkfish and its forgotten vegetables, spinach, helped by a biquinhos vinaigrette that boosts the dish and yuzu kosho-mandarin sauce. Pleasant grilled porchetta, pointed cabbage and white beet, enhanced by a tangy apple-roasted spelt sauce. We finish with a revisited plum clafoutis, with meadowsweet broth, mirabelle plum-tagetes coulis and walnut praline. It's all very exciting, and could win the three toques with a little more precision (the chef was absent when we last visited). The wine list, full of curiosities, takes us on a journey, and the very pleasant and competent staff accompany this cuisine with exaltation.
