Chef's Restaurant Little by little, Jonathan Datin is refining and asserting his style in the heart of the resort: in the busiest corner, he offers a moment of relaxation in this soberly contemporary space. A few manners to maintain his standing, but in fact a rather humble, precise and pleasant service for this cuisine that knows how to do just that, without getting carried away, in a product-accompanied juice or sauce scheme that works rather well: with the citrus cucumber sardine, the tuna lichette as an amuse-bouche with a very good piperade juice, the yellow pollack tomato grapefruit with its cromesquis and a shellfish broth and the strawberry mascarpone fennel dessert. Cellar to be improved (the help of a wine merchant or sommelier would not be superfluous), 2 quiet, solid toques.
