Chef's Restaurant The house is discreet, with a front that displays almost nothing, as if to reserve itself for those who know it. In fact, the restaurant has a confidential atmosphere, where insiders gather to enjoy authentic, meticulously-prepared cuisine. The couple Édouard Mignot and Émilie Rey create refined dishes, sublimating the seasons through well-staggered menus, from €50 to €175. The menu titles emphasize thoughtful sourcing: Vosges quail with white asparagus and lemon balm; Saône pike-perch, artichoke, French peas and emulsion; lamb with green asparagus, wild garlic, hay juice and gaudes; and a dessert of Bassam 68% chocolate, streusel and hazelnuts. Fine regional cellar (Paul Pillot, Jacquesson, Bertagna etc.).
