Since acquiring Sainte-Sabine in 2021, Séverine Pétilaire-Belet, who also owns the Hôtellerie de Levernois, has invested several million euros to restore this Burgundian Renaissance-era château, which was remodeled in the 19th century and is set in the heart of an eight-hectare park. The guesthouse remains one of the property’s greatest assets; the dining room, while more understated, with its round tables and acoustics that could be improved, offers a pleasant setting that could still gain more warmth and character. Trained at several prestigious restaurants across France, Alexandre Ziane creates contemporary cuisine that highlights regional producers: miso, black garlic, lovage, emulsions, and smoky notes come together to form a very modern palette. The trout from the Crisenon farm, rolled into cylinders with trout roe, candied lemon, and sorrel foam, impresses with its balance of saltiness, fresh vegetable notes, and creaminess. The char, confit in butter, surrounded by a variety of radishes in different textures and topped with a sauce of arugula, parsley, and greens, exemplifies a well-executed modern approach. The Barbary duck, slightly firm but topped with an admirably crispy skin, is served with a sauce of mild spices reminiscent of Dijon gingerbread. The blackberry dessert with elderflower and black garlic, built on a crumbly shortbread with sorbet, whipped cream, and a slightly vinegary syrup, dares to create a unique pairing whose precision transforms boldness into a natural choice. The wine cellar boasts a remarkable selection of Burgundies, ranging from village wines to grands crus and even a few older vintages. Sainte-Sabine thus presents itself as Levernois’s elegant younger sister—less ambitious, much more accessible, and, thanks to its cozy atmosphere and the overall quality of the dishes, particularly appealing.
