It's a terroir experience where civilization and rusticity come together in symbiosis, the sensation of the real and the raw, the precise gesture and the research, resulting in a memorable €97 menu: bottoni de veau aux truffes du pays, céleri rave confit au beurre et bouillon corsé aux champignons, une tartelette d'escargots d'Entrevaux, panais au carvi, ail fermenté et légumes, coulis à la livèche, gibier aux épines vinette, butternut enrichie au foie gras et jus, un coing confit au safran de Beuil, lait de ferme de Roure réduit à l'anthésite, crème glacée au cynorrhodon.
