Chef's Restaurant Winner of the Dotation 2024, Vivien Sonzogni, known from his work at Château de Germigney, has taken over Samuel Richardet's superb address in this wine village on the heights of Arbois. This handsome contemporary building is now home to the cuisine of a new, highly talented chef, who is set to make a name for himself as the months go by. A gastro, a wine bar, straightforward, regional and modern cuisine that's already making mouths water, with snails and cancoillotte espuma, just-poached Bresse poultry supreme, pressed thighs, yellow wine and tarragon sauce, quince dessert... A good introductory menu at €60, with the two toques retained until perhaps something better comes along!
