Chef de service : 1 restaurant Xavier Vassor, a passionate restaurateur, has been running the Château Colbert, near Cholet, for over 20 years, where his management skills and love of service have made this restaurant a must in the Touraine region.The son of a farmer, Xavier Vassor could have followed in his father's footsteps, but it was his passion for the restaurant business that guided his career. A native of Tours and trained at the Albert Bayet hotel school, he soon developed a passion for the restaurant business. "Once I'd passed my CAP and BEP, I left Touraine to work at the Intercontinental Hyde Park in London. I was there for 18 months, and it gave me the chance to learn English", he recounts.
A prestigious Parisian career
In 1985, Xavier joined the legendary Hôtel Nikko, quai de Grenelle, and its Les Célébrités restaurant, where Joël Robuchon had made his name. "I stayed for 16 years, until the hotel was bought out by Accor. RPR executives had their napkin rings there, as did the stars of TF1 and France 2. I progressed rapidly, going from chef de rang to restaurant manager for 10 years".
This Parisian experience enabled him to acquire a high level of professional rigor and room management skills.
Return to the provinces and installation at Château Colbert
Parisian life wearied the couple and, after a spell in Isère, the opportunity to join Château Colbert, near Cholet, arose in 2003."It was gloomy, and if we did four covers on a Saturday night, it was a big service. It was a difficult start," recalls Xavier, but his determination and the investment of the owners gradually transformed the château into a recognized gastronomic venue.
An award-winning kitchen garden and an undiminished passion
For the past ten years, Xavier Vassor has enjoyed the benefits of a vast kitchen garden that has won several awards in international competitions, integrating fresh, high-quality produce into the service. " At 60 years of age, my passion for the restaurant business remains intact. I can't count the number of young people I've trained, and that's undoubtedly my greatest professional satisfaction," he confides.
Today, just a few years away from his planned retirement, Xavier Vassor remains fully committed to the management of Château Colbert, where excellent service, passion and pedagogy make this address a must for gastronomic enthusiasts in Touraine and the Cholet region.
