Xavier Vanheule had more than one reason to choose the restaurant business. An introductory course at Le Cazaudehore, Saint-Germain-en-Laye, confirmed his choice. In 1986, he landed his first job at the Crillon Le Brave hotel in Vaucluse. It was there that he met Christèle, who had come to work as a pastry chef for a summer season. "I received a grounding in Mediterranean cuisine at Crillon-le-Brave, then went to the Concorde Imperator, in Nîmes, where I was able to deepen my knowledge with a gastronomic touch. "
In 1990, he joined Christèle at La Bégude Saint-Pierre, in Vers-Pont-du-Gard, where he earned his first chef's position. He stayed for twelve years, gradually taking on more and more responsibilities, including managing the Auberge de Saint-Maximin. It wasn't what I was destined for, " he says, "I'm a cook first and foremost.
During a visit, his in-laws told him that an inn was for sale. "We didn't go ahead with it, but we regretted it. A compromise had been signed, but it didn't happen. Finally, in 2003, Xavier and Christèle Vanheule became the happy owners of the Auberge du Château. of the Auberge du Château, ideally situated at the foot of the feudal château of Bressieux, overlooking the Bièvre valley.
