Tess CONSTANT
Head waiter : 1 restaurant Although she didn't grow up in a family of restaurateurs, our winner of the Éloquence Île-de-France 2024 trophy has always been attracted to service professions. With a literary baccalaureate - " at the end of ninth grade, I still wasn't sure of my future career path ", she recalls - Tess Constant has always been attracted to creative activities. In ninth grade, she was looking for a week's internship with a florist or in a pastry shop. When she couldn't find anyone to take her on, she dropped off a CV at the Élysée Palace, before being chosen and entering the building a few weeks later. " I spent a lot of time in the kitchen, but also with the florists. It was a great week! "
After her baccalaureate L, the young woman entered the Ferrandi school to earn a bachelor's degree in service professions. She worked at Kitchen Galerie Bis and Kitchen Ter(re) (two of William Ledeuil's Parisian restaurants), then applied to Troisgros, where she stayed for two years. " I left Ouches in the spring of 2023 as half-chef de rang. I missed Paris, so I joined Le Bristol as a commis, and now I'm a demi-chef de rang again. "
Attached to the codes of the grandes maisons - " the customers who book at Épicure also come looking for this French-style palace service " - Tess Constant imagines herself working as a demi-coucheuse at the Bristol. Tess Constant sees herself spending a few more years on the rue du Faubourg Saint-Honoré before, probably, opening her own restaurant with her partner, himself a chef at... the Bristol. Gault&Millau awarded her the Éloquence Île-de-France 2024 trophy.
