Chef : 1 restaurant After a wealth of experience working with Jean-François Piège and Hélène Darroze, and ten years as a caterer, Sébastien Tasset has decided to open his own restaurant in 2023.
Presentation

The son of an electrician and an estate manager, Sébastien Tasset remembers always wanting to become a chef. My paternal grandparents were farmers in the Paris region," he says. I started helping them at a very young age, I loved it, I was brought up to love simple, healthy products."

As a teenager, he naturally turned to the lycée hôtelier, graduating with a bac pro before being hired at Le Pouilly, in Pouilly-le-Fort (Seine-et-Marne), one of the finest restaurants in eastern Paris, under the direction of Fabrice Sébire. The young chef then moved to Avenue Montaigne and the Plaza Athénée, where he worked under Jean-François Piège: "He's the greatest technician I know," admits Sébastien Tasset. What's more, he was always keen to share his knowledge, explaining why to choose this apple, why to temper this food before cooking it..."

At Bas-Bréau, Barbizon, he met his future wife, Joanna.

He then returned to the Seine-et-Marne region, working at Le Bas-Bréau in Barbizon, where he stayed for a few years until becoming head chef. "I then had the opportunity to work alongside Hélène Darroze, on rue d'Assas, as well as opening Toustem for her, before spending three years as chef at Les Ombres, on quai Branly."

No longer in phase with the direction taken by Les Ombres' investors, Sébastien Tasset and his Polish wife Joanna Krauzowicz, a management graduate whom he had met at Bas-Bréau, set up a catering business that quickly flourished. "This business continues today, but I have teams to take care of it because, in 2023, we opened our own restaurant within this Domaine des Jardins that we created from scratch. "Local and seasonal products, preferably organic, bistronomic cuisine, a small, well-sourced cellar in a relaxing country setting, this Âme du Jardin is certainly well born. Gault&Millau immediately awarded it 2 toques and the Terroir d'Exception Île-de-France 2024 trophy.
