Romain Lévêcque cut his teeth with an independent Champagne winemaker before being called in 2018 to the bedside of the illustrious Maison Collery, with a mission to " rebuild the brand image and approach to the wines ", among other challenges. Quite early on, this family-run house produced its first bottle of champagne in 1893, before winning its first gold medal in Paris in 1904. In decline since the 1980s, this Champagne "institution", based in Aÿ, has been enjoying a spectacular renaissance in recent years. Its fundamentals? Remarkable raw materials from 11 of Champagne's 17 Grand Cru villages, representing a great diversity of terroirs, an art of blending pushed to the point of clockwork precision, and a highly accomplished approach to prolonged ageing - up to eight years for the white. up to eight years for the blanc de noirs - and an original approach to dosage - " like a whisky finish ", says Romain Lévêcque - with expedition liqueurs made in barrels from Burgundy or Sauternes, for example.
