Rémi LATRUBESSE
Chef de service : 1 restaurantRémi Latrubesse discovers his vocation during an internship in the hotel of a family friend. Afterwards, he promises himself: "one day, I'll become a hotel manager". In 2010, he trained at the Lycée Hôtelier in Biarritz. And while the idea of managing a hotel is gradually fading, Rémi Latrubesse describes his studies as the richest four years of his life, during which he apprenticed at Les Prés d'Eugénie: "It was the turning point in my career. "
After his apprenticeship, he decided to sail to Ireland to enrich his skills by learning English and working. In 2019, Les Prés d'Eugénie contacted him again to offer him the position of assistant head waiter at the restaurant. Two years later, he flew off to La Réunion for a few months.
On his return to France, he took charge of La Ferme aux Grives, in Eugénie-les-Bains. Today, Rémi Latrubesse manages a team of around 7 people (including extras), and never ceases to promote team spirit. It's the same spirit that, in his view, allows us to build a welcome based on smiles and kindness. Gault&Millau awarded him the Accueil Nouvelle-Aquitaine trophy in 2023.
