Paul STRADNER
Chef : 1 restaurantAustrian-born Paul Stradner has worked in some of the finest brigades in Germany and eastern France since 2002. After seven years at the Schwarzwaldstube restaurant in the Hotel Traube Tonbach in the Black Forest, he joined chef Jean-Georges Klein at L'Arnsbourg in Baerenthal, Moselle.
Three years later, ready to forge his own culinary identity, he took charge of the kitchens at Brenners Park-Hotel & Spa, a famous 5-star establishment in Baden-Baden, Germany, and a member of the Oetker Collection. In 2016, he was awarded an 18/20 rating and the laudatory accolade of "Rising Star" by our colleagues at Gault&Millau Germany.
Convinced that he had not yet completed his apprenticeship with his mentor, Jean-Georges Klein, he rejoined him in 2017, this time at the Villa René Lalique, which had opened its doors two years earlier, in 2015. The establishment definitively convinced him of his taste for family-run, human-scale businesses. Since 2020, he has gradually taken on the chef's apron, proudly succeeding the man who inspired him so much, and who remains consulting chef for the house he helped grow for many years.
