Presentation

The son of bakers and confectioners, Olivier Arlot always knew he would be a chef. "When I was six, I announced that one day I would open my own restaurant, and that it would be called La Fine Goule. Fortunately, only part of the prophecy came true!"he recalls with a laugh. As a child, he frequented iconic restaurants such as Jules Verne and L'Aiguière, where he discovered a"magnificent" sole meunière that would leave its mark on his memory.

Excellent training and inspiring mentors

After graduating from the Tours hotel school and winning the Olympiade des Métiers in 1998, Olivier Arlot began his career at Le Taillevent, working alongside Michel delBurgo. "The first six months were terribly difficult... but I really enjoyed myself once I'd learned the ropes," he says. He continued at the Plaza Athénée with Jean-François Piège, then at the Chèvre d'Or, accumulating experience and rigor in prestigious establishments.

Return to Touraine and entrepreneurial adventure

In 2008, he returned to Tours and opened his first restaurant on rue Colbert, followed by La Chancelière in Montbazon. Since September 2025, he has been running Le Pavillon, his restaurant in Tours. "Our first months have been very encouraging, our customers are loyal to us, and I've managed to set up favorable working conditions for our employees. It's a daily struggle, but the lights are green," he confides.

Simple, accessible and passionate cuisine

A wine enthusiast, Olivier Arlot enriches his cellar daily and surrounds himself with a team of sommeliers. His cuisine at Pavillon Tours is simple, accessible and generous. A roof-top is available to extend the culinary experience and offer a unique view of the city.

Today, Olivier Arlot is the epitome of a successful chef in Tours. His passion, expertise and commitment to his customers make Le Pavillon a must for all food lovers in Touraine.
