Chef : 1 restaurant Established for over thirty years in a small village in the Basque Country, two-star chef Margaret Lienhardt offers a sincere, local menu at her Auberge Goxoki."In my family, everyone was in the restaurant business," says Margaret Lienhardt. Naturally, she decided to follow the same path and spent three years training at Ferrandi Paris. After graduating, she worked at Lasserre in Paris, before continuing her career at Ledoyen. In 1981, she left the capital for Lebanon, where she spent two years working in the humanitarian field.
In 1983, back in France, she joined the Hôtel de Paris in Monaco for a few months, then decided to travel. Until 1990, when she felt the need to"return to the country". The "country" was the Basque Country, where she took over the Auberge Goxoki with her husband, Thierry Lienhardt. The couple had long had the idea of opening their own establishment. In this typical 18th-century house, Margaret Lienhardt builds short, high-quality menus around fresh local produce .
