Lucas Guimon, who has not yet turned 25, seems to have been born for the restaurant business. His grandparents were hoteliers in Pithiviers, his great-uncle was head waiter at Château d'Artigny, his mother was a manager at the Institut Paul Bocuse and his father was headsommelier at the Arc en Ciel restaurant in Lyon (in the famous "Crayon").Lyon (in the famous "Crayon"), at La Rotonde in Charbonnières (which peaked at 17/20) and then owner of L'Escapade restaurant in Tours, his destiny seemed to be all mapped out. "Even though I followed a general path for a while, I soon joined the Lycée Technologique to get closer to gastronomy," he explains.
Solid training and international immersion
After completing a BTS in hotel management, Lucas gained a wealth of experience, most notably at Château d'Artigny, where he met his wife, Amélie Barbier. Recruited in 2022 as assistant maître d' at Domaine de la Tortinière, he then joined Gaëtan Evrard's Evidence as head sommelier. "Gaëtan is like a professional father to me. I stayed there for almost 18 months before leaving for Ireland to work at Kelly'sResortHotel. With four restaurants to manage and over 1,000 references in the cellar, I made a lot of progress and became bilingual," he confides.
Back to France and the direction of L' Evidence
During a wine tasting, Lucas and Gaëtan Evrard came across the same rare bottle, and the contact was renewed. Lucas accepted the position of restaurant manager.i didn't hesitate," he says, "it was an opportunity to renew contact and continue learning alongside Gaëtan.
A year 2026 full of projects and challenges
A lover of wines, particularly from the Rhône Valley and Corsica, Lucas is preparing for 2026 with ambition: building a new team and introducing alcohol-free pairings to accompany menus."Exciting prospects, new challenges, I love it," he concludes with a smile.
