Léa SENOT
Chef : 1 restaurant A native of Germigney in the Jura region, Léa Senot honed her craft working alongside the best in the business before opening Vertfeuille in the spring of 2025 in Arc-en-Senans with her partner, Clément Bourdiaux.Presentation
A native of Germigney in the Jura region, Léa Senot has built an impressive culinary resume, working in the kitchens of Xavier Beaudiment, Georges Blanc, and Anne-Sophie Pic before joining Yoann Conte at his Maison Bleue. It was there, alongside Clément Bourdiaux, that she refined her vision of a cuisine rooted in the local terroir: “ Yoann Conte taught us a great deal about how to approach the plate, how to share, and how to bring the terroir to life.”
In 2024, the duo set up shop at Clos d’Alice in Arbois, where Gault&Millau awarded them a Young Talent Trophy just a few weeks after their arrival. A sudden setback followed, as their contract ended two months later. Undeterred, Léa and Clément bounced back, applied for the Gault&Millau Young Talent Grant, and secured the support they needed to bring their own project to life.
At Home, at Last
Since the spring of 2025, Léa Senot has been running her restaurant in a charming housein Arc-en-Senans, just a stone’s throw from the UNESCO-listed Royal Saltworks. Amid stone walls and exposed beams, in a setting that’s both elegant and rustic, she creates cuisine full of wit and sensitivity—once again praised by Gault&Millau.
