Chef : 1 restaurantBorn in Japan, Kazuyuki Tanaka grew up in the hustle and bustle of his family's ovens. Without a diploma, he flew to France in 2006 to deepen his knowledge. His thirst for learning led him to work in top establishments with chefs Gilles Tournadre (Gill, Rouen), Emmanuel Renaut (Flocons de Sel, Megève) and David Zuddas (DZ'envies, Dijon), where he met his wife, Marine.
They went on to work together at Régis and Jacques Marcon, then at Benoit Vidal. In 2015, Kazuyuki Tanaka and Marine decided to open their own restaurant, Racine, in Reims. Here, cooking becomes a living art form. From his ovens, the chef conjures up dazzling miniature paintings in the service of the product. Bold, lively dishes with straightforward pairings that marry Japanese refinement and precision with local French produce. Gault&Millau singled him out as Jeune Talent de l'Année 2016, immediately awarding him 2 toques, followed by a 3rd in 2018, when he was named Grand de Demain. A fine recognition that confirms the taste for excellence of a chef driven by the desire for perfection.
