In the heart of the Corbières region, nestled among the garrigue, vineyards, and rocky outcrops,the Auberge du Vieux Puits (5 toques) is a must-visit destination for food lovers. Since 1992, Gilles Goujon, a Meilleur Ouvrier de France, and his wife Marie-Christine have built one of France’s leading restaurants here. It is in this village in the Aude department that Julien Teyssandier serves as head sommelier.

With nearly 900 wines, about 80% of which are from the Languedoc, the restaurant’s wine cellar reflects the chef’s deep connection to his region. Julien Teyssandier guides guests through both the big names and more hidden gems, inviting them on a journey through unexpected bottles.
