Chef : 1 restaurant Chef Jimmy Tsaramanana cooks four-handed with Alain Solivérès at Le Violon d'Ingres, Christian Constant's former stronghold celebrating French tradition."As a child, I already lovedmaking cakes, but my father,who was adoctor, took adim view ofthe culinaryprofession. Motivated, Jimmy Tsaramanana entered the prestigious Ferrandi-Paris school, where he obtained his CAP, BEP and bac, followed by a BTS as an independent candidate in 2000. Theapprentice sharpened his first knives at Jacques Le Divellec's restaurant just a stone's throw from Les Invalides, then at L'Oasis in Mandelieu-la-Napoule, workingalongside theRaimbault brothers, whohired him.
After a few months, the young commis returned to Paris to renew his acquaintance with Jacques Le Divellec. Eventually, he applied for a position at Violon d'Ingres,one of chef Christian Constant's famous restaurants in the7th arrondissement ."As soon asa place becameavailable, he offered me the chance tojoin theteam at Le Relais de la Poste, in Magescq, in the Landes region of France. "
In 2001, Jimmy Tsaramanana saw his wishcometrue. At lunchtime, he worked at Les Grandes Marches, in the Bastille district, and in the evening, at Le Violon d'Ingres, where he ended up taking over the kitchen full-time six months later.After astint at theHôtel de Crillon and being turned down at the legendary Taillevent, Jimmy Tsaramananaflew to Japan, where he worked his way up the ranks. In2007, he took up his firstchef's position at Hajime in Osaka.
In 2015, he returned to Le Violon d'Ingres through the front door .In 2020, Christian Constant handed overtheestablishment to Bertrand Bluy, who then invited Alain Solivérès to join Jimmy Tsaramanana behind the stoves. Together, theychampiontraditional French gastronomy in the tradition ofMontalban'sgreat chef Christian Constant.
