Chef de service : 1 restaurant"My father is a singer-songwriter who used to play in piano bars and restaurants. Then he opened his piano-bar in Prague, where I spent all my school vacations ", says Jessica Chelala, who then turned to a renowned hotel school in Switzerland. Six months before graduating, an acquaintance of her father's contacted her to work at the Riverside Hotel in Prague. Nine months later, the same company offered her the position of manager for the opening of the Pachtuv Palace, also in Prague. Hard to refuse. "I was pretty much on my own, even though I'd just come out of school."
In 2006, another step forward, this time as Operations Manager at the Eddé Yard in Beirut, Lebanon, where her parents are originally from. "I was supposed to stay for six months, but then the war broke out," explains Jessica. The country left its mark on her, and she returned the same year as Operations Manager for three Hands-On restaurants. She later became a consultant for the Amber Hotels group. A year later, in 2008, she became assistant to the general manager for the pre-opening of Hôtel Le Gray.
After ten years abroad, Jessica Chelala returned to France and met her partner, chef Jérémie Le Calvez. In 2012, the couple took over La Pomme d'Api, in Saint-Pol-de-Léon. In their first year, they were awarded 2 toques, followed by a 3rd in 2015. Today, the duo can boast a 16.5/20 rating and the Accueil trophy in the Gault&Millau Tour Bretagne 2022.
