Remarkable Restaurant It's a story of paths and threads woven together, linking spaces and times that can be discovered by following the waterways, the paths of an understood terroir, the lifelines of a chef nourished by experience and travel. From Jean-Michel Carrette's earliest memories of his father's kitchens, through Japan and Burgundy, to the stoves of Troisgros, the chef has established his own map of taste, precisely laid out in the dining room, designed by Amandine Carrette. The world's influences are superimposed like layers on the plate, each telling a different story about the terroir. In three, six or eight courses, the menus showcase a generous, finely crafted intuition that is harmoniously accompanied by a rich, well-explained cellar. Menus from €42.
