Guillaume GUIBET
Chef : 1 restaurant Guillaume Guibet, winner of the Techniques d'Excellence Hauts-de-France 2024 trophy, has given new impetus to Verbois.Le Verbois was created by my grandfather in 1981," says Guillaume Guibet. Unfortunately, a few months after opening, he died in a car accident. My father, Laurent, who was training in the kitchens of the Negresco, in Nice, then came back up to take over his estate and make his legacy bear fruit."
Three years with Kei Kobayashi
Guillaume Guibet was born in Creil many years later, in 1995. The kitchens of the family restaurant soon held no secrets for him. He spent many hours with his father, while his mother, Laurence, a sommelier, ran the dining room. He studied at the excellent Lycée Hôtelier in Le Touquet, before trying his hand at Le Chiberta, in Paris - "but I dreamed of working at Guy Savoy on Rue de la Loire.then to Akrame Benallal, who then sent him to Kei Kobayashi. "I stayed with this great chef for over three years, and learned a lot from him. He's a great technician.
Back home in 2017
At the family home in Saint-Maximin, his parents are thinking of handing over the reins. Now in their sixties, they are looking forward to the probable return of their son, who will undoubtedly give new impetus to this somewhat sleepy home. "I agreed to join my parents on condition that I could carry out major renovations and bring the business up to date. This has been a gradual process. We're even going to open guest rooms in the spring of 2025, and I think we've put Le Verbois on the right track. It's also thanks to my parents, who continue to support me morally and physically." Under his leadership, the family-run business won a fine third toque, and Guillaume Guibet was awarded the Techniques d'Excellence Hauts-de-France 2024 trophy.
