In the 2000s, he opened or took over several restaurants
After working for several years alongside Christian Willer at Le Martinez, then at Le Meurice with the young Yannick Alléno (the two men became friends), Frédéric Hubig took over the emblematic Astiert the emblematic Astier in 2006, before opening Marée Jeanne and the restaurant-cellars Jeanne A and Jeanne B, as well as Café Moderne, near the Bourse, and Sassotondo, a pure Italian. "They were great adventures, with many fond memories, but when it came time to take stock, I mainly lost money with these restaurants. But our customers were delighted, so I have no regrets."
Chez Astier, a new direction since Covid
At Astier, the only restaurant he has kept today, he has sought to "move upmarket in recent years , offering a more precise cuisine than before, based on more upmarket, better sourced products. We've reintroduced table service, which our customers love and which fits in perfectly with the spirit of the place, and we still offer a very attractive cellar, built up thanks to the solid network I've been able to weave over several decades.
