François DURGUEIL
Chef de service : 1 restaurant Adopted by a family involved in humanitarian work, and the son of a sociologist whose upbringing greatly influenced him, François Durgeuil is passionate about his profession."In my opinion, a restaurant is like a theater. The play must be perfectly oiled. The quality of the welcome, the kindness of the service, the authenticity of the cuisine and the care taken at the time of departure are all essential to the success of the experience. If one of them is missing or seized up, the whole thing falls apart .
Teenage passion for service
Born in South Korea and adopted at the age of two by a Limoges family deeply involved in humanitarian work, Franços Durgueil developed a passion for cooking and service at an early age. As a teenager, uninterested in the medical discussions that took place at family dinners, he helped out in the kitchen, served and cleared away, and naturally turned to the lycée hôtelier. It was a natural progression for him to attend the Lycée Hôtelier Jean Monet in Limoges, where he obtained a BP Arts de la Table (vocational diploma in culinary arts).
L'Agape to replace Sur le Pouce in 2022
"In 2019, I opened my own restaurant, Sur le Pouce, in the kitchen. I was joined a few months later by Jérémy Tricard, a better cook than me, and I took over my place in the dining room. We moved upmarket and decided to swap the original name for Agape in 2022. There are three of us in the kitchen, and as many in the dining room, to offer our customers the best possible quality of service" .
Always extremely attentive to service quality, François Durgueil was the ideal candidate to receive our Accueil 2024 trophy for the Nouvelle Aquitaine region.
