Félix PERROTTE
Sommelier : 1 restaurantBefore entering the restaurant business, Félix Perrotte studied financial engineering at Paris Dauphine. While working at BNP Paribas, his desire for change took him by surprise. "I found myself working my ass off in a job I didn't really like. I knew I was going to set up a restaurant, but I didn't know it would happen so quickly."
That's how, in 2020, he joined the restaurant Brut, in the 17th arrondissement of Paris, to become the dining room manager. "I was trained at top speed by Anaïs Gond. We were booked up all the time, and there were 300 wines on the menu from some great estates." Having weathered the Covid crisis, the young man is leaving to make his dream come true: to open his own restaurant. While waiting for the project to become official, he worked for a few months in a Parisian wine bar, Coup d'œil.
May 2023 saw the opening of Eunoé, in the 11th arrondissement of Paris, with chef Ryuji Sato, whom he had met a few years earlier in Tokyo. The same year, Gault&Millau awarded him the Jeune Talent en Salle Île-de-France trophy. "I'm very happy to be rewarded for having an unconventional service, not stuffy and more in tune with the times."
