She belongs to a new generation of female sommeliers who are quickly taking on leadership roles. Trained at the Lycée du Sacré-Cœur in Saint-Chély-d’Apcher, Lozère, Elsa Daudet was among the student sommeliers recognized by the Association of Sommelier Instructors in 2022. She then joined the restaurant of Franck Putelat, a Meilleur Ouvrier de France chef who has been based at the foot of the Cité de Carcassonne since 2006, where she became head sommelier.

At La Table de Franck Putelat (4 toques), she crafts wine pairings that complement the chef’s cuisine throughout Occitanie and beyond—from the Corbières to the slopes of Salagou—with a precision that is never ostentatious.
Limoux sparkling wines as the flagship
There, she championed Blanquette and Crémant de Limoux in particular, served from the aperitif through to the house cocktail—a blend of Blanquette, carrot, and freshly squeezed orange juice. “Limoux sparkling wine is far too little known in the wine world, even though its quality can rival that of champagne,” she asserts.
