Chef : 1 restaurant After traveling the world, young Venezuelan-born chef Cristina Chomet Tejeda and her husband Pierre have opened the Ambos restaurant in the heart of Paris.Cristina Chomet Tejeda was destined for industrial design, but decided to make a radical change of direction and go into cooking. "I was attracted by the atmosphere, the harmony, the rigor that reigns in restaurant kitchens."
She studied at the Hofmann cookery school in Barcelona, then worked for two years in the Catalan capital before flying to London, where she worked at L'Atelier Robuchon for three years, rising from commis to sous-chef. "It was an unforgettable experience, where I learned rigor, techniques and respect."
Cristina Chomet Tejeda was then selected to cook for the Queen of England, at Buckingham Palace! " She worked there as sous-chef for two and a half years. After a brief return to Barcelona, she decided to move to Bangkok with her husband Pierre Chomet, and took up her first position as chef at the gourmet restaurant Le Savelberg.
Back in Europe at the time of the Covid crisis, Cristina, who was pregnant, supported her husband and worked with him on the "Top Chef" tests, before they both opened Ambos, which in Spanish means "both". Their cooking is a fusion of the two. Gault&Millau, who supported them by awarding them the "Dotation Jeunes Talents" , gave them a score of 12/20.
The young couple don't claim 100% local cuisine. " We've traveled a lot, and our cuisine reflects our origins and our travels," says Cristina and Pierre Chomet, whose dishes include nods to Venezuela (such as arepas, corn cakes), as well as Thai influences. Cristina and Pierre Chomet wanted their restaurant to be warm and inviting, with a fairly sober decor, an open kitchen and a counter, so that they could chat with customers. "We wanted a friendly, family atmosphere, to be attentive to our customers, who should feel a bit at home!"
