Coralie SEMERY

Propriétaire : 1 restaurant Coralie Semery was attracted to the world of room service from an early age, and is now the brilliant manager of Restaurant Ébullition in Montpellier. These qualities earned her the Accueil Occitanie 2024 trophy.

Presentation

Born to a mother who worked at the Barbézieux post office and a father who was a farmer, Coralie Semery had no passion for school. I wasn't an excellent student, it's true," she confesses. But I was determined to learn a trade. I went to several open houses, and I was immediately drawn to the restaurant business. The rigor, the supervision - it suited me perfectly."

A seminal first experience with Magali Sulpice in Val-Thorens

A self-described shy person, she underwent a metamorphosis once in contact with customers. "It's quite inexplicable, I've always been very comfortable in the dining room, from a very young age. I love it." After a few short experiences, Coralie Semery joined Jean Sulpice as a head waiter, at just 22 years of age, under the direction of Magali Sulpice. The young woman then spent a few seasons at the Casadelmar in Porto-Vecchio ("the most beautiful terrace in France"), before returning to Jean Sulpice for four years. It was here that she met Boris Caillol, her future partner.

Ébullition, a house in constant evolution

It was during our time with Matthieu Dupuis Baumal, then at Domaine de Manville, that we matured our project," recalls Coralie. For a more substantial financial contribution, we first left to work in Switzerland and Norway before opening Restaurant Ébullition in 2019." A small Gault&Millau toque to start with, then two, before the third arrived in 2024, as a logical reward in an evolutionary plan that seems clear between the two associates. "Today, we want to think bigger, hire more staff, to further improve our customers' experience. With Boris, we have no intention of stopping there."
