Coline FAULQUIER
Chef : 1 restaurantLike many of her fellow Top Chef contestants, Coline Faulquier has long had to answer questions about her (brilliant) career on the famous TV show. The 2016 finalist has since confirmed all the good things we thought of her, earning her our Dotation pour les Jeunes Talents. Today, it's for her cuisine alone that we push open the door of her restaurant.
Born in 1989 in the Nivernais region of France, Coline was influenced by the tasty dishes of her mother and grandmother.her mother and grandmother, Coline quickly embarked on a career as a cook, obtaining a BT in hotel and restaurant management from the Avignon hotel school, before joining Ferrandi in Paris.
"When I left school, I joined Éric Frechon at Le Bristol as a commis de cuisine. I spent a year there and then, in early 2012, I was recruited as demi-chef de partie at Christophe Bacquié. "After a few months as head chef at the Basilic et Citronnelle restaurant in Aix-en-Provence, the young woman decided to enter Top Chef. Her acclaimed career and the links she forged with Michel Sarran gave her the opportunity to open her first restaurant, Pergola, in 2016, in an out-of-the-way corner of Marseille. " Success came quickly," she recalls. A few months after I opened, I was awarded two toques and the title of Jeune Talent in the 2017 Gault&Millau."
The adventure would last a few seasons before, in early 2019, Coline opened her new table, Signature. "Lionel Levy and Michel Sarran, in particular, helped me a lot. It's a restaurant into which I've poured all my soul, all my energy. I hope my customers feel it.
In any case, the Marseillaise by adoption is now flirting with a third toque, which is more than ever within her grasp, because her restaurant exudes joie de vivre, and because this talented cook knows how to have fun with tastes and textures.
